Wisconsin is the nation's top producing cranberry state, and growers expect this fall's crop to be the second largest on record, an estimated 430 million pounds. (A record 460 million pounds were harvested in 2008.)
The industry is focused on innovation and on touting the health benefits of the cranberry, said Tom Lochner, executive director of the Wisconsin State Cranberry Growers Association.
With a wide array of cranberry products sold at stores and farmers markets - dried sweetened cranberries, cranberry-laced barbecue sauces, salsas and jams, cranberry sauce and a rainbow of juices - it's easy to imagine a meal incorporating cranberries in every course.
Will we ever see cranberry Coke, cranberry Pepsi or Cranberry Dr Pepper?
